Soup Season Starts Tonight

There is an exact evening every year when the light drops early and the kitchen asks for soup. Tonight was it.

Soup is the only dish that tastes like the weather. Cook it slowly and it will always tell the truth.

This one was leeks, potatoes, and the parmesan rind I’ve been saving since June. No blender, just a wooden spoon and some insistence. Serve it with too much bread and no apologies.
